Leather and the need to recycle
Rack of lamb, lamb chops, joint of lamb, sautéed lamb… France has a high reputation for its meat dishes, especially lamb and mutton which can be served in myriad ways!
However French meat-eating habits would lead to serious ecological problems were it not for the fact that the hides are recycled as leather! Every year, fellmongers give a new lease of life to tonnes of hides discarded by abattoirs.
A prime example of traditional collaboration between two interdependent professions, which also explains why fellmongers work near regions where many sheep are bred.
